Let’s Go To Nacho Heaven
A quick, easy dinner or snack the entire family will love. Who doesn’t love nachos?! Wednesday night I was so exhausted from work and knew I didn’t want to spend a lot of time getting dinner ready. I was able to throw these super nachos together within 20 minutes using pretty basic ingredients that are most likely in your fridge, too!
- 1 lb ground turkey
- Tortilla chips
- 1 packet taco seasoning
- 1/4 cup onion
- 1 clove garlic
- chopped green bell pepper
- 1 can black beans
- 1 cubed avocado
- 1 diced tomato
- 1/2 cup shredded mexican cheese
- sour cream
Drop 1 tablespoon olive oil to a pan and start browning your ground turkey. Add in the taco seasoning and cook a few more minutes to your preference. Toss in the onion and garlic and enjoy those aromas! Throw in your chopped green bell pepper.
Line a cookie sheet with foil and begin to assemble the tortilla chips. This is the fun part! It’s time to layer. My toddler loved helping assemble the toppings. Sprinkle your taco meat mixture over the chips, followed by some black beans, tomato, and cheese. Continue for as many layers as you’d like. At the very end we sprinkled an extra layer of cheese and popped into the oven at 350 for about 5-10 minutes. Just enough time for the cheese to be nice and melty. Remove your pan from the oven and top with cubes of avocado, sour cream, salsa, and cilantro. Voila! You’ve got some nifty nachos.
